INGREDIENTS

1 lb (450g) shrimp, peeled and deveined
2 tbsp chilli oil (adjust to spice preference)
3 cloves garlic, minced
1/2 cup spicy olives, sliced
1 tbsp lemon juice
1 tsp smoked paprika
1/2 tsp salt (adjust to taste)
1/4 tsp black pepper
1 tbsp butter (optional, for extra richness)
2 tbsp fresh parsley, chopped (for garnish)
Lemon wedges (for serving)

METHOD

1. Heat the chilli oil in a large pan over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant.
2. Add the shrimp, paprika, salt, and black pepper. Cook for 2-3 minutes per side until the shrimp turn pink and opaque.
3. Stir in the spicy olives and lemon juice, cooking for another minute to combine the flavors. Add butter if desired for extra richness.
4. Remove from heat and garnish with fresh parsley.
