Apostle Hot Sauce was conceived in 2018 following Lydia and Mats' move to Paekākāriki. Mat had been concocting delicious sauces for years, so in an attempt to get to know their community the pair started selling them at local markets. With an overwhelmingly positive response from new friends and neighbours they decided to ramp up production.
There's a hard and fast rule in their business: no artificial colours, preservatives, flavours or thickeners. Instead, Mat and Lydia use locally hand picked peppers, Kawakawa leaves from their own garden and rely on fresh ingredients to create their vibrant range of sauces.
